I have seen a lot about deodorizers for gliders, I was wondering do both males and females smell and how bad do they smell? Also, is it better to just have one or are they better in pairs?
Males and females both "smell". The smell mostly comes from their urine, but they can also put off a musky scent (mostly the males do this). If the smell bugs you there are products to eliminate the smell. The Pet Factory has these products.

It is better to buy two of them because if you don't spend enough time with them, they can get depressed and die. I only bought one and was paranoid that he would get depressed(even though I hold him day and night) so I am getting another. I think it is a personal preference in which gender you get. I usually buy females in any pet but I picked a male cause he was not as expensive. He is a sweetie.
I recommend buying:
2 Males
2 Females
or
1 Nutered Male & 1 Female.
Once they breed they are mean and it is illegal for you to sell, give away, trade, etc the babies.

I am looking to purchase a Sugar Glider, but upon doing some research I read that you should never buy just one. Is this true, can they really die? Is it possible to start with one, and get another later? If so, do they tend to fight, and what gender should you get?

You should not start with just one and get one later. Save up for two and buy two. If you can't afford two now and don't want to wait then consider not getting Sugar Gliders.
